And.....Ta...Da...I finally made this incredibly tasty Veggie Pie last night. I got this amazing recipe from Roses r Red Blog.



I have some diced pumpkin leftover from the veggie pie so I made this simple Thai style dessert. Growing up in Thailand, I'm always fond of any kind of desserts that have sweet coconut milk. This is super easy to make. You just boil diced pumpkin in coconut milk, sugar and a dash of salt until they are soft, about 10-15 minutes. You can eat it hot or cold with ice. I believe those who are big fans of coconut milk will love this delicious dessert.

Pumpkin with sweet coconut milk sounds terrific! You did an outstanding job on your first pie. Everything tastes good in pie form!

ReplyDeleteEverything looks delicious. I love vegetable pie, but I've never put polenta in it. I am a big fan of coconut milk. I love how simple your dessert is, and that it contains a healthy veggie!
