Soup Time And Giveaway Winner!

I've been working a LOT for the past few weeks. I LOVE working so much and love it more than anything but I am always looking forward to spending my Sundays and Mondays off by doing nothing but lounging around the house and finding something yummy to fill my tummy:)

It was raining so hard this morning. I was very cold and hungry when I came back home from my dentist. After checking my fridge, I came up with this rice soup.

Tofu & Kale Rice Soup


I started by boiling a pot of water and added about 2 cups of cooked rice. When it was boiling, I added chopped kale,diced celery and tofu, seasoned with soy sauce (or salt) and pepper. I put a half teaspoon of Marmite to add the nice brown color to the soup. Served in a bowl and sprinkled with Nutritional Yeast,...YUM! After giving a stir, it will look like the photo below, Mmmm!!! So tasty and comforting!!!



Last week, I made a huge pot of Vegetable Stock again. I was so proud of myself that I planned ahead for dinner to feed my lovely family when I've been busy working 5 days in a row so I can come home and cook easy veggie soup for them.

Last Tuesday night, I made this fantastic soup by using my vegetable stock, added some veggies (spinach, celery and baby carrots), cooked pasta and a can of cannellini beans. It took less than 20 minutes to prepare the soup (It would have been only 15 minutes if I didn't cut my finger when I was cutting the carrots plus Dr. Dad and Dr. Nathan were panicky trying to stop the bleeding, Ouch!!!).

Crock-Pot Experiment
I thought I had such a brilliant idea!!! Last Thursday morning, I filled my crock-pot with veggie stock, baby carrots, diced celery, potato chunks and cooked chickpeas. I told my husband to add frozen corn about half an hour before serving and don't have to wait for me because I had to work late. I left home with pride:)

I got back home almost 7 pm and the soup was still in the crock-pot. Nobody touched or ate it! I was so upset and asked why they didn't eat the dinner. My husband said the potatoes weren't cooked. I said "WHAT?" and later on, I realized that I forgot to turn on my crock-pot...Ooups!!! My poor boys didn't get to eat dinner until 8 pm that night, it was still yummy though:)

    Its so great you make your own stock, we only ever use the stock powder...i guess were a bit lazy to make our own ;)

  7. That tofu and kale soup looks incredible, what a perfect combination! And a superstar in terms of calcium, that is a good soup to eat if you are looking for strong bones.

  9. So sorry to hear about the crock pot mishap! It was a great idea, so you should try it again sometime. I love the look of all of your soups, I've been eating soup 3 or 4 times a week these days. Congrats on the giveaway, that's some really cute stuff!

    I think we have all made the same mistake not turning on the crockpot before. After doing it once you remember to double check after that. At least that is how it worked for me.

    Your soup looks good. I love soup this time of year. And, anything with kale is something I love to eat because it is so good for you.

    How is your finger? I hope it is healing quickly.

  11. I had similar crock Pot issues when I made stuffing in it for Thanksgiving. First I forgot something so I turned off the CP to add it in... forgetting to turn it back on. An hour later I remembered something else so I went to add that ingredient only to find it had been off since last time. It was a mild disaster.

  14. Tofu, kale, and rice sounds like a perfect soup combination. I usually add nutritional yeast to my soup too. I love the extra boost of flavor it adds.

    Your story about the crockpot is too funny! Suff like that happens to all of us.
