My Dream Garden!!!

At last, I have found "My Dream Garden", not too far away from my home.


I know...I know...that there are so many beautiful garden out there. But this garden is very special to me. It belongs to Kim's lovely aunt whom I know for so long. I went to her house so many times but mostly at night so I had never paid attention to her back yard.


I was so amazed by the varieties of plants and trees her husband grew with his own hands, lots of love and care. The healthy look of green leaves and colorful flowers all over.I love these orange flowers. I don't know its name but I was told that this plant brings wealth to your home. I have one at my house too...Ha ha..I'm gonna be rich soon.

Look at this wonderful lotus pool and succulents. I am a succulents lover so this is my favorite spot. She gave me a bag full of succulents to grow at home. Yay! Lucky me!!!


Other than beautiful flowers, they have many kinds of fruit trees such as white peach, persimmon, tangerine, guava, mango, lemon (or lime??) and kitchen plants like tomato, sweet pea, chili and herbs. How wonderful!!

Coconut & Almond Cookies

I'm very pleased to share with you my secret recipe of Coconut & Almond Cookies. Every time, we have family potluck party, I'm always requested to bring these yummy coconut cookies.

This is really easy to make. I just used Pillsbury Ready To Bake Chocolate Chip Cookie Dough (24- piece package). Cover each cookie dough up with sweetened coconut flake and almond slices. Then bake in the oven at 350 degree F for 15 minutes. I believe everyone loves them because they were gone so fast just like a tornado!!!

Tasty Veggie Pie & Dessert

It may sound unbelievable to say that this is the first time of my life I make "Pie". But it's true, I've never made pie before...never...ever!!!


And.....Ta...Da...I finally made this incredibly tasty Veggie Pie last night. I got this amazing recipe from Roses r Red Blog.

I don't have pie dishes so I used 3 oven proof bowls and I used Pillsbury Crescent as a pie crust.

They look pretty good, don't they?

This is how my pie mixture looks like. I have diced carrots, diced sweet potatoes, diced pumpkin and frozen sweet corn, peas and green beans plus the yummy polenta. I highly recommend everyone to give it a try. It's really satisfying and filling. Of course, it's so quick and easy to make. If I can do it, so can you!!!


Pumpkin With Sweet Coconut Milk

I have some diced pumpkin leftover from the veggie pie so I made this simple Thai style dessert. Growing up in Thailand, I'm always fond of any kind of desserts that have sweet coconut milk. This is super easy to make. You just boil diced pumpkin in coconut milk, sugar and a dash of salt until they are soft, about 10-15 minutes. You can eat it hot or cold with ice. I believe those who are big fans of coconut milk will love this delicious dessert.

My Magical Garden & My Favorite Eats!!!

Here they are, as promised.....My Cherry Tomato Plants!!!! They are growing soooo....bigggg...., just like magic!!

If you look at them closely, you'll see that they have been already producing green tomatoes. I know, each of them is different in size even though I give them the same amount of love and care. Oh, I love them all sooooo much!!!

This is the tray of my Mother's Day Breakfast that my son made for me. He made my coffee with vanilla soy milk and a teaspoon of raw sugar, apple cinnamon oatmeal and my favorite Tomato Smoothie. I am so proud of him, he even did the clean up nicely!!! Nathan...You're the best and I love you so much!!!


Note: Nathan made a "Strawberry Milk Shake Oreo Smoothie" for himself. He's crazy for this smoothie and asked me to tell everyone to try to make it. I found this recipe from For The Love of Food .

Chickpea Blondies

I can't say good-bye without sharing with you my favorite dessert. I made this healthy and tasty dessert last week but I just photographed the last 2 pieces of my left-over after I got my camera back. If you want to know why Diann said she loves these chickpea blondies soo much, you should try to make it. Here is recipe. I used whole wheat flour instead of brown rice flour and I add crushed cashew nuts on top. Mine came out just perfect, I love it so much and I'll definitely make it again and again and again!!!!

An Inspiration!!!

My husband has been out of town since last week. I miss him so much and can't wait for him to come back home. WHY??? Because I really NEED the camera he took with him, hahaha!!!

Well, without my favorite camera, I can't have great pics of what I have been cooking!!!

While I'm looking through "My Pics" and thinking what I should post on my blog today. I then recalled that this inspired me so much when I saw her beautiful garden. Now I know why I have tons of pics of plants from my tiny garden.


Do you see the tomato plants at the right corner of the above pic? I planted them on 4/12 in different spots. #1 in a very large planter, #2 in a smaller one and #3 & #4 in the ground.


On 4/23, they were growing bigger. Do you see the yellow buds? Next week, I will show you how big they are when I have my camera back, I promise!!
Last but not least, these are my lovely kitchen plants: parsley, sweet basil, Thai basil (under the white stool), chili, mint and my sweet tangerine. Oh, almost forgot!! Look at the right corner ~ do you recognize that plant? What is that? I believe it is garlic scape!! You can get a recipe for garlic scapes from She Ate What???.

Broccoli and Corn Pudding

Just a quick post to share with you what I'm cooking today.
I don't know why I really wanted to make this yummy pudding after I saw the photo and the recipe from eat'n veg'n blog. Maybe because I love coconut milk. YES! That's right!!!
I LOVE everything that has coconut milk in it. The best thing of all, the recipe is so simple which is perfect for easy veggie gal like me! Please go to "here" for the recipe.

I used 8x8 square pan and 1 lb bag of each frozen broccoli and corn, as you may know by now that I'm not good at using measuring cups so you can see that my pudding doesn't have enough of coconut milk and flour mixture.

The pictures didn't come out that great because I used my very old camera. But the taste of this beautiful pudding was so......
creamy ........ and........really ......really......gooooood!!!
